In 2020, Shelby authored “Plant Based Kitchen: A Dietitian’s Guide and Cookbook to Plant-Based Eating,” emphasizing nourishing and sustainable dietary practices. Through Mind Soma, Shelby leverages innovative techniques such as nutritional psychiatry, cognitive behavioral therapy, and lifestyle rehabilitation to address unique health challenges. A graduate of Georgia State University’s Didactic Program in Dietetics, Shelby completed her in-depth clinical training in Medical Nutrition Therapy at Emory University Hospital.
