Rebecca’s love of cooking at a young age led her to the field of dietetics. Rebecca is a Registered Dietitian, licensed in the state of Kentucky where she received her bachelor’s degree from Morehead State University, completed her dietetic internship at the University of Kentucky and her master’s degree in clinical nutrition at National University of Natural Medicine.
After reviving her grandparents’ longtime garden spot is when she fell in love with gardening which piqued her interest in food as medicine, integrative and functional nutrition, and local food systems.
Rebecca has been a dietitian for almost six years and has a variety of experience with acute & long-term care.
Currently, Rebecca is the Director of Dietetic Services at Appalachian Regional Healthcare (McDowell & Martin locations) and is also an adjunct instructor teaching introduction to nutrition at the University of Pikeville. Rebecca and her husband currently own and operate Up a Creek Farm, located in Prestonsburg, KY.
